tag:blogger.com,1999:blog-40796216739815337252024-02-07T18:07:11.567-08:00SweetLady Sweets RecipesUnknownnoreply@blogger.comBlogger37125tag:blogger.com,1999:blog-4079621673981533725.post-59947107128254657302008-07-13T08:24:00.000-07:002008-07-13T08:43:29.671-07:00Blueberry Pie<a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://farm4.static.flickr.com/3231/2662460787_6200ece88f.jpg?v=0"><img src="http://farm4.static.flickr.com/3231/2662460787_6200ece88f.jpg?v=0" border="0" alt="" /></a><br /><br /><br />adapted from Martha Stewart's Baking Handbook<br /><br />For the dough<br />All-purpose flour - 2 1/2 cups<br />Salt - 1 teaspoon<br />Unsolted cold butter, cut into small pieces - 1 1/2 sticks (170 g)<br />Ice water - 1/4 cup<br />Cold vodka 1/4 cup<br /><br />For the filling<br />Fresh Blueberries, picked over - 6 cups (about 3 pints)<br />Sugar - 1/2 cup<br />Cornstarch - 1/4 cup<br />Lemon juice - 1 tablespoon<br />Cream - 1 tablespoon<br /><br />- In the bowl of a food processeor, combine flour and salt.<br />- Add the butter and pulse until mixture resembles coarse crumbs with some larger pieces remaining, about 10 seconds.<br />- To mix by hand, combine dry ingredients in a large mixing bowl, then cut the butter with a pastry blender.<br />- With the processor running, add the ice water in a slow steady stream, then add vodka just until the dough holds together.<br />- To do by hand, mix with a spatula and add water and vodka.<br />- Test by squeezing a small amount of dough together, it should hold.<br />- Turn the dough onto a work surface. Divide in half and wrap each half in plastic wrap.<br />- Refrigerate for at least 1 hour or overnight. The dough can be frozen for up to 1 month.<br /><br />- On a lightly floured surface, roll out one half of dough into a 12 inch round.<br />- Fit dough into a 9 inch pie plate, predding it into the edges. Trim the edges.<br />- Chill the pie plate for about 30 minutes.<br /><br />- Place the blueberries in a large bowl.<br />- With your hands, crush about 1/2 cup of the berries, mix.<br />- Add the sugar, cornstarch, lemon juice and mix.<br /><br />- Spoon the mixture into chilled pie shell.<br />- Roll out the other half of the dough and using a small cookie cutter cut stars.<br />- Place the stars on top of the filling with the tips touching.<br />- Brush the stars with cream.<br />- Refrigerate the pie for another 30 minutes.<br /><br />- Preheat the oven to 400F.<br />- Bake the pie for about 20 minutes.<br />- Reduce the oven temperature to 350F and bake the pie for another 40-50 minutes until the crust is deep golden brown and the juices are bubbling.<br />- Transfer the pie to a wire rack and cool.<br />- The pie can be kept at room temperature, loosely covered with plastic wrap, for up to 2 days.<br /><br /><i>Comments </i><br />- Scrap pieces of dough can be sprinkled with cheese and herbs and baked for about 30 minutes along with the pie. I reduced the butter to 170 g, but forgot to reduce the flour and put all 2 1/2 cups in. The dough was quite stiff, but it tasted great. Remove the bacon with a slotted spoon and set aside.<br />- Add the chopped onion to the bacon fat and saute on low-medium heat for about 8 minutes, until the onion is soft and caramelized.<br />- Add the garlic and corn to the pot and saute for 30 seconds, constantly stirring.<br />- Add the stock, milk, and potato. Simmer for about 15-20 minutes on low heat until the potato is ready.<br />- Pour 2 cups of the soup into a blender and puree it.<br />- Transfer the pureed soup back to the chunky soup, mix, add the spices and reheat.<br />- Serve hot with crispy bacon bits for garnish.<br /><br />Comments:<br />- This soup can be made without bacon and with vegetable stock, so it will be suitable for vegetarians. Just saute the onions in some olive oil and serve it with some garlic croutons.<br />- This is my first try with corn. Place all the ingredients for the filling into a bowl and mix well until the mixture is uniform.<br />- Remove the dough from the refrigerator and transfer to a floured work surface. Roll out the dough as thin as possible. Cut into two equal portions.<br />- Place spoonfuls of the filling 3-4 cm apart on one half of the dough.<br />- Brush a thin layer of water on the dough around each spoonful of filling.<br />- Place the other half of the dough on top of the first half. Press the dough around each filling to seal.<br />- Using a cookie cutter or a knife, cut around each pocket of filling.<br />- In a large pot, boil water with a generous amount of salt. When the water is boiling, drop the ravioli in the water and cook for 6-8 minutes. Strain.<br />- For the sauce: In a small pot, heat some oil and add minced garlic to it. Saute for about 1 minute on medium heat. Make sure that the garlic does not burn.<br />- Add the chicken stock and let boil for a minute.<br />- Add the butter, reduce the heat to medium-low and let the sauce bubble for a few minutes until it thickens a little bit.<br />- Add the chopped cilantro.<br />- Pour the sauce over the ravioli and serve immediately.<br /><br /><i>Comments:</i><br />- Cocoa only gives the dough colour, it does not effect the taste much.<br />- Do not over mix the dough or it will become tough.<br />- Make sure the dough is rolled very thinly.<br />- The original sauce called for 1/2 cup of butter and some sage leaves which I didn't have. Bring to boil, remove from heat and add the chocolate chips. Stir until smooth, then stir in the remaining 250 ml of cream. Pour the mixture into a large bowl.<br />- Warm the milk, sugar, and salt in a saucepan. In a separate bowl, whisk the egg yolks. Pour it into a container and freeze.<br /><br /><i>Comments:</i><br />- I don't have an ice cream maker, so I did it with my hand mixer.<br />- Make sure to use full fat milk and not a 2% milk like I had. It separated into milk parts and water, even when it cooled in the fridge I had pools of water on the surface. Although, the final product didn't suffer from it.<br />- I used Hershey's semi-sweet chocolate chips and I found that the ice cream is a bit too sweet, so I would reduce the amount of sugar the next time.<br />- It's a super-chocolate ice cream. Form each into a baguette and let proof for another 40-60 minutes, until they are doubled in size.<br />- Then you can make this Épi de Blé shape or you can bake it as it is. Remove from the heat, cover and leave for an hour, or until the <span class="blsp-spelling-corrected" id="SPELLING_ERROR_1">raisins</span> and apricots have absorbed most of the liquid, then drain.<br />- Cut the dried apricots into small raisin size pieces .<br />- Preheat the oven to 170C.<br />- In a medium-sized bowl, combine the flours, baking powder, baking soda and salt. Mix.<br />- In a large bowl, mix the melted butter and sugar until combined. Stir constantly, so that eggs won't curdle.<br />- Whip the eggs on high speed for about 10 minutes until firm peeks.<br />- Add the lemon juice, run, and vanilla to the egg mixture and mix just until blended.<br />- Fold in the ground carrots to the above mix by hand<br />- Sift the flour, baking powder, and cinnamon together. Add the bread crumbs and ground almonds. Mix.<br />- Gently fold the dry ingredients to the egg mixture just until blended.<br />- Butter and line a baking pan with a parchment paper.<br />- Pour the batter into a baking pan.<br />- Bake at 350F for about 45-60 (depending on the oven) minutes until the cake springs back when touched.<br />- Let the cake cool slightly then remove from the pan<br /><br /><strong>Icing</strong><br /><br />Cream cheese at room temperature - 250 g<br />Icing sugar - 100 g<br />Lemon juice - 25 g<br />Whipping cream 35% - 250 ml<br />- Whip the cream to medium-hard peaks.<br />- Place the cream cheese in a separate bowl and mix it for a few minutes on medium speed until there are no lumps.<br />- Sift the icing sugar and add it to the cream cheese. Mix just until blended. Scrape the bowl.<br />- Add the lemon juice to the cream cheese and mix until incorporated.<br />- Add 1/3 of the whipped cream to the cream cheese mixture and mix until incorporated.<br />- Continue adding the rest of the whipped cream in stages and mix after each addition just until blended.<br /><br /><strong>Cake Assembly</strong><br /><br />- Cut a completely cooled cake horizontally into 2 or 3 layers.<br />- Place the bottom one on a cake board and cover the top with a thin layer of icing.<br />- Place the second layer on top of the icing and cover it with more icing. Do not overmix.<br />- Put the egg whites into a piping bag fitted with a round nozle.<br />- Pipe small rounds onto a baking tray.<br />- Bake for 15-20 minutes. Turn off the oven and let the cookies cool in the oven.<br /><br /><i>Comments</i>:<br />- I usually put a little bit less sugar, only a few teaspoons less.<br />- I whip the egg whites with a dash of cream of tartar.<br />- If you leave the cookies to cool in the oven, they'll be very crisp, but if you take the cookies out, then they'll be nice and chewy.
